Dr. Stephen Grace is a professor in the UA Little Rock Biology Department . He is a plant physiologist whose research is focused on the biochemistry and metabolism of plants. He and his students have carried out extensive studies on polyphenolic antioxidants in tomato, green tea and Echinacea. He helped to establish the Campus Garden and serves as faculty advisor for the Campus Garden Alliance.
In this lecture, Dr. Grace explains how the Campus Garden provides instructional opportunities as well as nutritional food for the campus.
